In addition to the fact of exhaust/recycle & fan capacity - please also factor is the pain of cleaning the chimney fairly regularly. This can be offloaded to an external agency - but if you wish to avoid the added cost - please be prepared to invest upwards of two hours every month - or suffer the droplets of oil that would drip onto your gas stove/burner/range.
Most liquid cleaners available today are ineffective in dealing with the intense stickiness - and the only really effective cleanser is kerosene. Since we are talking on food zones - this is hardly a very desirable option.
