Parmesan cheese is an Italian extra-hard cheese made of pure milk of a cow. There are few varieties of it available. It goes best with Spaghetti and Italian pasta, but can be used otherwise also. It is a part of national cuisine of Italy and it is grated in the dishes as it is generally dry and hard.
It is usually either Parmigiano-Reggiano or Grana Padano cheese. The way they are made, and the region they come from are strictly regulated.
Only these brands(Parmigiano Reggiano, Grana Padano) are the protected ones. U may find in many places cheese is sold as Parmesan cheese, but that has no resemblance with the authentic italian chese. USA is the biggest producer of these cheeses. No doubt it is the most expensive of the cheese in the world and not everyone would like its taste.
